Richard’s beef and feta stuffed peppers (Kelvedon)


Coconut oil
500g lean mince beef (less than 5% fat)
Feta cheese
3 tbsp fresh mint – chopped, or you can use dried mint
3 spring onions finely chopped
4 Red or yellow peppers


  1. Add two tsp coconut oil to a non-stick frying pan.
  2. Fry the beef mince until browned. Once browned, remove from heat and add into a large mixing bowl.
  3. Add chopped spring onions and the mint to the cooked mince beef.
  4. Crumble desired amount of Feta cheese to the rest of the ingredients in the bowl and stir to combine.
  5. Cut the top off the peppers and scoop out the seeds.
  6. Place peppers in an oven dish and fill with the minted beef mixture (don’t overfill).
  7. Place in a pre-heated oven at 180oc and cook for 20 mins.
  8. Serve with quinoa and spinach leaves.
