Lottie’s lean turkey burger with smoky wedges (Great Baddow)


Serves two

Ingredients:

365g Extra Lean Turkey Mince
Pinch of salt and pepper
40g red onion or white onion diced
1 egg
1 apple – skin removed and grated
2 tsp dried oregano
2 sweet potatoes
2 tsp paprika
1 tsp dried coriander
Coconut oil
95g raw spinach/kale/beans/asparagus or broccoli

Method:

Preheat oven to 220 °C.

  1. In a big bowl mix turkey mince, onion, egg, apple, oregano, 1 tsp paprika and season with salt and pepper. 
  2. Bring a large saucepan of water to the boil. 
  3. Cut the sweet potato into preferred wedge size, carefully drop into boiling water and remove when water comes back up to the boil. 
  4. Let the wedges steam then gently toss with coconut oil, paprika and dried coriander. Spread wedges out on non-stick baking tray making sure there is space between and roast in the oven for 20-25 mins at 220 °C until nice and crispy. 
  5. Shape the burger mix into two burgers and gently fry with coconut oil until golden brown. 
  6. Cook in the oven for 15-20mins depending on thickness. 
  7. Serve with greens.
