Emma’s sweet and sour chicken with boiled brown rice (Maldon)

Serves 4
20 minutes prep
15 minutes cooking time


4 chicken breasts
3 tsp five spice
1 red pepper
1 yellow pepper
1 red onion
1 small thumb sized piece of ginger
1 clove garlic
1 red chilli
1 tsp sesame oil
1 tin of chopped pineapple in juice
2 tbsp balsamic vinegar
2 tsp low sodium soy sauce
200g brown rice
1 tsp low sodium soy sauce


  1. Dice the chicken, and add the five spice and leave to marinate. 
  2. Finely dice the peppers, onion, ginger, garlic and chilli. 
  3. Add a few squirts of oil spray into the pan and fry the chicken until golden
  4. Add the chopped ingredients along with the pineapple and juice and cook for two minutes. 
  5. Add the soy sauce and balsamic vinegar and leave on a low heat for 10 minutes.
  6. Boil your rice for 10 minutes, drain and mix in soy sauce. 
  7. To serve, place rice in a bowl and add the chicken on top.
